preheat oven to 350F
grease 9 x 13 inch rectangular cake pan
1 stick (1/2 cp) unsalted butter - melted
1/3 cp granulated sugar
1/4 cp brown sugar
(stir sugar into butter until dissolved - ~200 strokes)
1 egg
2 Tbsp water
* 1/2 tsp almond extract
* 1/2 tsp vanilla extract
(if you don't have almond extract, use 1 tsp vanilla)
1/2 cp almond butter (Jiff brand - like peanut butter)
(Mix egg, water, extracts and almond butter in with the butter/sugar mixture)
In a bowl, mix together
* 1/4 cp oat flour (can use another 1/4 cp wheat flour instead)
1/2 cp whole wheat flour
1/2 cp white flour
* 1/2 cp ground almond meal (coarse grind 2/3 cp almond if you don't have almond meal)
* 1/4 cp sweet whey powder (optional - I wonder if protein shake powder would work?)
1 tsp salt
2 tsp baking powder
1/4 tsp baking soda
1/8 to 1/4 tsp cinnamon (to taste)
(Add dry ingredients to butter mixture & stir until mixed thoroughly)
Add
1 cp dark chocolate chips
1 cp semi-sweet chocolate chips
(Stir to mix)
Pour into greased sheet pan and spread. Bake for 30 minutes. Let cool. Cut into 48 individual cookies (8 by 6).
