Potty training and a road trip?

First of all - YAY it looks like Hannah is finally ready to start potty training. Yesterday we went to Uhaul to have them look at the hitch they installed on my car. While we were waiting, Hannah suddenly said "Mommy, I have to pee pee RIGHT NOW!" so we ran into their bathroom and she peed on the potty. She peed on different potties (the mall, my mom's, the grocery store and then at home) 6 more times during the afternoon and evening. Yeah, she had a couple of wet diapers in between but would still pee on the potty when we went in there, too. So far today she's peed on the potty twice and hasn't had an accident yet (pooped in her diaper before I put her in panties). (Edit: spoke too soon - she just peed her panties. But instead of just freaking out, she said "Mommy, I'm peeing my panties!". She used to just stand there and freak out about being wet but not correlate the two)

In less than 2 weeks we're going on a long trip to California. 800 miles one way, which without kids and multiple stops would take 12 hours. We drive halfway, spend the night in a hotel, and drive the rest of the way the next day. It usually takes closer to 8 hours of driving each day with all the stopping, lunch breaks, etc.

How can we handle the potty training issue, provided we're still working on it? Do we put her in pull ups or something while we're driving, or do we just have to stop by the side of the road with the portable potty? Any tips?
