Mashem Fry em put them in a stew! "Mashed Potato Waffle Cakes"

So on my way home lastnight I decided I wanted to try a modification of the boiled potato "Snushie's" my dad invented, (basically take an old boiled potato, and smash it in a well oiled hot waffle-iron.

But I didn't have any old boiled potatos. so I wanted to try it with instant mashed. and upon some experimentation, I made a fine supper.

First, warm up the waffle iron

-Then mix up 1.25 cup of potato flakes, (as per the instructions on the box, I used chicken broth instead of water).
-Mix in about 2-3 eggs (i was using the beaters stuff so not sure exactly)
-Mix in about 1/4 cup of olive oil, minced garlic, and about 1/2 cup of panko crumbles (found the crumbles were needed to give it some more structure, breadcrumbs or bacon bits might work.)
-Once the waffle iron is nice and hot, add some grape seed oil to the bottom pan and wipe/spray the top with more, let it heat.
-pop in a moderate spoonfull in the middle. (something about fist sized or smaller)
-Mash it down, and wait for it to cook one cycle.
-Give it about 1min after the light kicks off and gently pry it open, it should be looking nice and golden, but dont try and extract it just yet, with the iron open give it another minute, to steam off a bit and firm up in the middle.
-Carefully lift out with 2 forks, they are a little more fragile than normal waffles. but not bad. and the oil keeps them from sticking.

On my last one I put a a few slices of smoked cheddar on it, and when it didnt melt right away i waffled it down, (which melted it nicely, but stuck some to the roof of my waffle iron, but instead of being a big mess it crisped up a bit and was able to pull off a lacy crunchy cheesy thing, which i garnished the others with.
