I Always intend to make tasty food, and it surprises me how often I succeed, It may sound like I win more than I really do because I never post the Meh/ok ones. ;-D Anyway...
A week ago I picked up a small acorn squash, intending to stuff it and cook it sometime, Well sometime was lastnight, and it was tasty, so heres what I did.
preheated the oven to about 400,
Sliced the squash in half ans scooped the seeds.
in the blender, I chopped
-a handful of rice crackers,
-some Gyro meat (sunflower market sells it, its my favorite sandwich meat!)
-2 types of goat cheese, a hard (parmigiano like cheese) and a soft (Chevre)
-spoonful of minced garlic,
-2 table spoons of Spicy steaksauce, (Frida's Dragonfart(
pickapeppa sauce would work well too and it can be found nearly everywhere))
mashed that into the squash, and baked stuffing side up in a bread tin with a little water in the bottom for about 30min.
When I pulled it out I found the squash was still a little under done, so i flipped it over in a bowl, and microwaved it for a 60seconds. Topped it with a little seas salt, and devoured!
