Sunday night I started some blackbeans in my small crockpot, with a little chile oil, and some seasalt.
Then yesterday I completed it,
Added some store bought vegetable stock,
glazed up 1/2 a yellow onion and 3 cloves of garlic, added that to the stock,
added 1/2 can of tomato paste
transfered most of the black bean water and cooked it down for a bit on my stove
Added some cumin, cilantro, black pepper and crushed red pepper,
transfered in the beans and just before plating it added a dollop of lowfat sour cream.
once it was in my bowl I crumbled in a bit of sheep cheese. And served it with some dill bread. would have been good with corn chips too.
