These are as delicious as their name is long ;)
Mix 1/2 c butter with 1/4 c brown sugar and 1/4 c sugar [or as I did, 1/2 teaspoon stevia], add 1 egg and 1 teaspoon vanilla extract. Mix in the zest of 2 limes and the juice of about 1 of the limes--add the other to water for a delicious drink as you mix ;).
Then mix 1 1/4 flour [I used 10 grain whole grain Bob's Red Mill], 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, a pinch of salt if you like [I skipped it] and add it to the other.
Mix in ~3/4 c unsweetened coconut flakes, 1 1/4 c chocolate chips, and ~1 cup oats. It will take awhile to mix these together and you will despair that the batter is not wet enough to handle it, but really, it is. I gave up at this point and mixed with my hands.
Bake at 375 for 10 minutes. They are delicious and gorgeous.
As these are gifts, I will prolly take a photo of them at some point....
