I have so many photos of desserts I made before Christmas and I've been meaning to post recipes, but am only just getting around to it. For now I'll do things one at a time and I'm starting with these squares. They're delicious and not too sweet, and I've found out that they freeze very well!
Here's what you'll need:
- 2 cups brown sugar, packed
- ½ cup butter
- 2 eggs
- 1 ½ tsp. vanilla
- 1 ½ cups all purpose flour
- 2 tsp. baking powder
Base
Melt butter in saucepan, remove from heat. Stir in brown sugar, eggs and vanilla. Combine flour and baking powder and stir into ingredients in saucepan. Spread in a 9”x13” greased pan. Bake at 350o for 20 minutes.
Topping
- ¼ cup butter
- 1/3 cup white sugar
- 1/3 cup corn syrup
- 2 tbsp. water
- ¼ tsp. salt
- 1 ½ cups sliced almonds
Combine butter, white sugar, corn syrup, water and salt in saucepan. Bring mixture to a boil for 4 minutes, stirring constantly. Remove from heat. Stir in sliced almonds. Spread topping over baked base. Bake at 350o for an additional 15 minutes.
Optional - melt 1 square semi-sweet chocolate and drizzle over pan.
As you can see, I opted out of the chocolate on top
