"Despite having an unexpected reaction to the peach given by Hoggle in the Labyrinth, I was not willing to give up this succulent fruit. When in season, I buy them at the farmer's market. I also stock my shelves with a can or two of peaches in syrup. One of my favorite peach desserts is the peach crisp." - Sarah Williams
For the filling: 1 large peach , diced 1 tablespoon brown sugar 1 teaspoon all-purpose flour 1/8 teaspoon ground ginger
For the topping: 3 tablespoons all-purpose flour 3 tablespoon rolled oats 1 tablespoon brown sugar 2 tablespoons butter , melted
INSTRUCTIONS: Heat oven to 350 degrees F (177 degrees C).
To make the filling: 1. Mix together the diced peaches, brown sugar, flour, and ginger in a small bowl. 2. Transfer peaches to a small baking dish or ramekin.
To make the topping: 1. In another small bowl, mix together the flour, oats, brown sugar and melted butter. 2. Scatter the topping over the peaches evenly. 3. Bake in the oven for 30-35 minutes or until topping is golden.
