I completely understand what you mean about Arthur. He's really having a hard time of it as he doesn't know what's going on with Merlin and so everything turns inward. He wonders what's wrong with him and why Merlin won't give him a chance, or if he has perhaps misinterpreted everything as he now feels rejected in what you pointed out was a rather brutal way.
I think Merlin might be a bit too young (and perhaps naive) or not experienced enough to know exactly how to process everything. He's never really seen how a healthy relationship is supposed to function and so while he understand the logistics, he's too focused on what could go wrong rather than on what could go right. Like you said, he is painting everything as very black or white, unwilling or perhaps unsure, of how to take the risks that he would actually like to take.
