As I mentioned before, Josh's aunt bought me the
Deceptively Delicious book and a food processor too. A couple days after Christmas we went to the store and I bought broccoli, carrots, cauliflower, spinach, and sweet potatoes (plus I had a butternut squash at home) in hope of turning them to puree and sneaking them in foods.
Well, I have been sicklier than I thought. As usual with a flare-up I eat very little (or suffer the consequences in the bathroom), but this time I have also be extremely fatigued and have been spending a lot of time in bed or on the couch. Now I am feeling cramps in my calves and have pains in my back, which I'm sure are due to a combo of not eating much and not exercising at all. But today I decided I had to *try* to do something productive and I knew the veggies were not going to last long in the fridge. Plus, Josh had to work later today so I had some extra time to work.
So, I busted out the new food processor, steamed and roasted veggies, pureed them, measured and bagged them, and then organized them in the freezer. 3 hours later I left no evidence of my work (except what is in the freezer).
This is most of the bagged puree waiting to be put away. Top to bottom, left to right: sweet potato, butternut squash, carrot, spinach, cauliflower, broccoli.
I tasted all the purees and wasn't impressed with any taste except the sweet potato. It was fabulous! I even ate a 1/2 cup of it alone. Roasting it gave it a wonderful taste and it didn't need salt or butter or anything! Yum!
Here the purees are being placed in a nifty drawer I bought to put in the freezer, makes for easy access and keeping things organized in there!
