In English, "border" is apt to cause confusion, because a border also means the actual flower bed. So "edger" is the safer term to use. Anyway, edgers do make borders look neater. However, I don't think they are really necessary.
If you don't let grass invade, and keep the flowerbeds mulched, in my opinion the garden will look fine. It is more important to choose the plants carefully, so you have a decent succession of blooms.
To remove the roots and prepare the soil I strongly advise renting an electric tiller. It makes a big difference! Hoeing takes forever and can be back breaking.
