1lb poached chicken breasts, chunked
1 onion, chopped
3-4 cloves of garlic
0.5 cup-ish of medium salsa
14oz can diced tomatoes
Spinach
Corn
Fresh parsley
Dried oregano
Pepper
Salt
Gochujang (tbsp?)
Sweet paprika
Red chile flakes
Fry onion, add garlic, allow to soften. Add chicken, can of tomatoes, salsa, dried oregano, various chiles, and allow to simmer on med-low for a bit. Add frozen spinach and corn and allow to simmer for another ~8ish minutes. Eat with grated Jack cheese and a pinch of sour cream on corn tortillas.
