I agree with @tiredbuthyper. I tend to do better with longer writing times. Themes/prompts in particular don't matter to me (though I did really like the lyric prompts), since if I really feel like writing I can twist just about any prompt to suit my fancy, but having the time to write is an issue. Under normal circumstances, I like to have at least 4 - 6 weeks to put a proper piece together. It doesn't take me that long to do the actual writing, but I tend to spend a lot of time in the 'planning and research' phase. And it doesn't matter whether it's for a drabble, ficlet, proper one-shot, or even a short multi-chapter - it ends up taking me about the same time frame.

But I know a lot of people like the short and sweet kind of contests/fests too. Maybe we could have monthly mini-contests, something as stress-free as possible (like a drabble or ficlet due on the last day of the month), and two bigger contests or exchanges, one for each half of the year. Honestly, I was really interested in the holiday exchange idea, but it was too last minute for me to commit to, even though it was announced at a decent time. I had already committed to fests for other fandoms by that point.
