So in an effort to put healthier carbs in my diet, I made these bran muffins the other day, and they turned out SO GOOD that I wanted to share the recipe with you. :D I found a classic bran muffin recipe online, then read through the comments for people's modifications and used the ones that sounded good to me. Here's the final recipe. It's full of whole grains and has virtually no fat!
Bran Muffins of Awesomeness
Ingredients:
1 1/2 cup wheat bran
1 cup buttermilk 1 tbsp lemon juice + skim milk to make 1 cup
1/3 cup vegetable oil 1/3 cup applesauce
1 egg 2 egg whites
2/3 cup brown sugar
1/2 tsp vanilla
1 cup all-purpose flour 1 cup whole-wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup raisins Craisins, pecan bits, chopped dates, and 1 tsp cinnamon
Directions
1. Preheat oven to 375 degrees F. Spray muffin cups with cooking spray.
2. Mix together wheat bran and lemon juice + milk; let stand for 10 minutes.
3. Beat together applesauce, egg whites, sugar, and vanilla, and add to milk/bran mixture. Sift together flour, baking soda, baking powder, salt, and cinnamon. Stir flour mixture into bran mixture until just blended. Fold in craisins, nuts, and dates, and spoon batter into prepared muffin tins.
4. Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!
Makes 12 muffins of awesome.
