Mexican Soup

Tim and I accidently went a little overboard on the garnishes due to lack of planning so we had a little competition to see who could come up with the best way to present our soup using all 5 garnishes (avacado, sour cream, white cheddar cheese, cilantro, and crispy tortilla strips).  Pick a favourite!

The Recipe: Mexican Soup
1/2 cup diced onion
1/4 cup zuchinni (just because I had some)
1/4 cup green pepper diced
1 can of diced tomatoes
1 large roasted red (orange, yellow) pepper
1/2 cup black beans
1/2 cup corn

2 cloves garlic
1 small lime
1/2 jalapeno (because I am wimpy)
1/4 tsp cayenne pepper
1 tsp chilli powder
1.5 tsp cumin
salt and pepper to taste

Saute onion and garlic, green pepper and zuchinni. Add tomatoes, roasted pepper and seasonings. Cook over medium heat about 15 minutes. Until everything is smelling and looking good then puree in food processor. Put back in pot on stove and add black beans and corn. Heat and serve with garnishes of your choice.

Garnishes:
avacado
cheese
sour creme or creme fraiche
cilantro
corn tortilla crispy strips*

* take fresh corn torilla wraps (I got mine at Thriftys) drizzle with a little olive oil, cut into long thin strips and bake in the oven until crispy like tortilla chips.
