Well, oops. I screwed up the cookies. Surprisingly, they came out pretty good. So, here's the new recipe (assumes the use of a stand mixer):
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed dark brown sugar
1 Tbsp egg replacer
2 Tbsp water
1/2 bag Ghiradelli 60% cacao dark chocolate chips
Sift together flour, baking powder, baking soda, salt, set aside.
Soften the butter. Melting it partially is ok. Dump in in the stand mixer and, using a dough hook, start it whipping. Dump in the sugars. Ignore it for a while while you make the replacer eggs. Dump that in too, followed immediately by the flour mix. After it kneads for a bit, you may have to stop the machine and scrape the sides of the bowl, so everything gets mixed in well. when the dough is crumbly, dump in the chocolate chips. Let it go another few minutes.
Form into small-handful sized blobs of dough and chips, using a little squeeze to hold everything together. Drop it onto a cookie sheet and bake at 375 for 9 minutes.
Makes several dozen soft, doughy, chocolate-delivery tools.
