It's winter down here in the bottom half of the world, which means soup!
On a Friday night though I tend towards the fast and easy for dinner and the chicken and courgette soup that is one of our favorites certainly ticks those boxes as well as being really tasty.
Himself and I enjoyed soup and mixed grain toast while watching the olympics on TV once the tiny tyrant had gone to bed.
This recipe is so easy, but the one problem is that we tend to want it in winter when courgettes(zucchinis) aren't in season.
Smoked Chicken, courgette and orzo soup
4 cups chicken or vege stock
2 cups water
1 cup orzo (aka risoni I think ...)
200g smoked chicken breast cut into chunks
1/4 cup basil pesto
2 courgettes (zucchini) trimmed and cut into small dice
salt and pepper
Bring stock and water to boil in large pot. Pour in orzo and cook for 5 min until starting to swell. Add chicken, pesto and courgettes and simmer 5-10 min until pasta is cooked. Season with salt and pepper and serve immediately.
Serves 4
I've used left over roast chicken instead, but it isn't as tasty, and when courgettes are totally out of season and thus ridiculously priced due to being imported from somewhere crazy I've occasionally used broccoli instead, but again, it isn't as good. The leftovers are good the next day for lunch if you are only feeding a couple of people, but more like a pasta dish than soup, as the orzo soak up most of the soup overnight :)
