This woodcut is featured in a book on lebkuchen/marzipan forms that I got on ILL:
http://daten.digitale-sammlungen.de/bsb00007417/image_3 I thought maybe it could also be woodcut blocks in process of creation, but then it occured to me that the job title 'formschneider' would apply both to a mold maker for lebkuchen/marzipan (i.e. the 'form' listed in recipies) and the person that cut the blocks for woodcuts as shown in Jost Amman's Ständebuch working in a print shop as a 'formschneider'.
At any rate, the pieces that the man is carrying are perhaps a bit big for a book printing and they are with a curved top like some of the forms from period.
