I have come into possession of a bag of late season bell peppers and I want to make stuffed peppers and freeze them. I usually stuff with a meatloaf type mixture, ground beef, soaked rice, eggs, seasoning then cook in a tomato sauce. Would it be better to stuff and freeze raw, or cook them first? Anyone have any creative ideas to jazz them up? Pictures to come when I get stuffing! Thanks in advance.
