Baked chocolate cheesecake brownies today. So good.
The recipe:
1/2 cup semi-sweet chocolate chips
3 tbsp butter
1 package cream cheese, softened
2 tbsp butter
1/4 cup white sugar
1 egg
1 tbsp AP flour
1/2 tsp vanilla
2 eggs
3/4 cup white sugar
1/2 tsp baking powder
1/4 tsp salt
1/2 cup AP flour
1/2 cup chopped walnuts
1 tsp vanilla
Toast walnuts for about 5-7 minutes.
Melt chocolate with 3 tablespoons of the butter in a microwave, 45 seconds, stir then 30 seconds. Stir until smooth. Set aside to cool.
Cream 2 tablespoons butter with cream cheese until smooth. Gradually add 1/4 cup sugar. Cream until light and fluffy. Blend into this 1 egg, 1 tablespoon flour and 1/2 teaspoon vanilla. Set aside.
Now beat the remaining 2 eggs until light and fluffy. Gradually beat into them 3/4 cup sugar. Continue beating until thickened. Stir in the baking powder, salt and 1/2 cup flour. Add the cooled chocolate mixture. Blend well. Stir in the nuts and 1 teaspoon vanilla.
Spread half of the chocolate batter into an 8x8 inch greased baking pan. Spread the cream cheese mixture over the top. Try to pour in the cream cheese mixture evenly throughout the pan. I just dumped it in and then it was really difficult to spread out. Drop the remaining chocolate batter by tablespoons over the top of the cream cheese mixture. Swirl through batter layers with a spatula for a marbled effect.
Bake in a preheated 350 degrees F (175 degrees C) oven for 35 to 40 minutes. Cool in the pan. Cut into squares or bars.
When I make this again I'll double the amount of chocolate chips. There wasn't quite enough chocolate flavour for me. Also, I'll double the recipe and use a 9x13 pan. Good thing it's just me right now and my roommates are away.
