Somebody at work gave me a most delicious sounding recipe. She even said she would bring me a pumpkin tomorrow so I can try it. I can't wait!
Pumpkin Casserole:
Needed:
1 Pumpkin
Ground Beef (or ground turkey or Boca burger)
Minute Rice or Long Grain Rice (she prefers long grain)
Fresh mushrooms
Red and Green Pepper
Onion
Water Chestnuts (to give it a nice crunch)
Bag of mixed frozen veggies (she recommends a corn, carrots, and peas mixture)
Cream of Mushroom Soup
Vegetable Broth
Instructions:
Brown the meat in a skillet
Cook rice
Cut up veggies
Clean out the pumpkin (rinse it out with water)
Once meat is browned and rice is cooked add everything to the skillet and let it simmer (just to heat everything up) then place casserole in pumpkin and bake at 350 for 45 min to one hour (pumpkin will turn a little brown on the outer skin when done) make sure when you serve it you scrape the sides of the pumpkin to enjoy with the casserole.
**I don't like mushrooms, so I will most likely leave that out and substitute either cream of celery or cream of chicken soup instead of the mushroom soup. I will probably use ground turkey, but I like that this can be made vegetarian too, since I have a lot of vegetarian friends.
I am excited to try it. I love pumpkin and any kind of squash. Tonight I had acorn squash, which might be one of my favorites. Growing up I always had spaghetti or banana squash. As an adult I've started trying others, and wonder why my mom never branched out! lol
