Is Twitter down for everyone, or just me? It's back, as if I need more distractions.

In other news, if you want to make a lasagna instead of coming to my house, here's what I do.

Ingredients:

2 cans artichoke hearts in water (chopped fine)
16 oz frozen chopped organic spinach (boiled and pressed to get water out)
1 lb of farmer's cheese
1 lb of cottage cheese, strained to let some liquid out
2 eggs
1.25 lbs of mozzarella (some of that is regular, some of it is smoked)
28 oz can of Muir Glen chunky tomato sauce
14 oz can of Muir Glen pizza sauce
no boil noodles

Method:
put some sauce in the bottom of the pan. layer noodles on top of that. Next is artichokes. I mix the spinach, farmer's cheese, cottage cheese, and eggs together and put that on next.  Then a layer of shredded mozzarella.  More sauce. More noodles. More artichoke hearts, then the spinach/cheese/egg mix, then more sauce, then the last of the shredded mozzarella.  Bake 45-55 minutes at 350 in a 9X13 pan (and be prepared for some of the sauce to spill out.  Wait for a while before eating as you will burn your mouth otherwise.  If you cut into 16 servings, each serving is about 6 points on Weight Watchers (if you use the part skim mozzarella and the lower fat cottage cheese).
