However if I lived closer to Drew I'd make a big pot for him because I think he could use it right about now.
Then again, I pretty much love cooking for my friends.
Better Than Chicken Noodle Soup
Ingredients
1 Tbs Olive Oil
1.5 Cups chopped onions
1.5 Cups peeled and chopped carrots
3 Large cloves of garlic, minced
2.5 tsp ground cumin
10 Cups low sodium chicken or veggie broth
2/3 Cup pearl barley
1 14oz can of diced tomatoes in juice
2/3 Cup dried lentils
4 Cups (packed) coarsely chopped Swiss Chard
Preparation
Heat Oil in a heavy pot over medium-high heat.
Add onions and carrots, saute until onions are golden brown (approx 10 min).
Add garlic and stir for 1 minute.
Add cumin and stir for 30 seconds.
Add 10 cups of broth and the barley, bring to a boil then reduce heat and simmer for 25 minutes.
Stir in tomatoes with juice and the lentils; cover and simmer until barley and lentils are tender, approximately 30 minutes.
Add the chard and simmer for 5 more minutes.
Season with salt and pepper and serve.
**Note
You could make this a more hearty soup by cutting up a chicken breast or two and adding it in when you add the lentils. Or you can pre-cook the chicken and add it in with the chard.
