This is what I made for dinner the other night and it turned out pretty good
EASY VEGGIE DUMPLING SOUP
2 cans or one box of Veggie Stock or if you're really freakin' ambitious homemade stock
1-3 Cloves of Garlic minced
1 inch piece of fresh ginger grated or 1 tsp powder ginger
1/2 small onion diced
1 bag of fresh spinach leaves
1/2 cup shitake mushrooms sliced
12 frozen veggie dumplings a la Trader Joe's
1 teaspoon oil of choice
Soy Sauce to taste
White or black pepper to taste
Heat the oil in pot add garlic and onion and ginger and saute till translucaent about 5 minutes on a medium heat. Add broth and let simmer for another five till onions are cooked, Drop in mushrooms and dumplings and let heat through about 2 minutes add spinach and let heat for another minute. Add soy sauce and pepper and that's it. You can substitute chicken stock and meat dumplings (which is what I really had for dinner but for some reason unbenounced to me opted to write down a veggie version.) Don't overcook the dumplings or they will fall apart in the soup.
