Every once in a while, I decide to rotate my pantry stock and look for recipes to use things up. I thought this recipe would be interesting as I haven't had tuna salad in ages.
Ingredients
- 1 can of chickpeas (Sexist food! LADYpeas)
- a coupla' scallions (Why does everyone call these something different?! OHH, I know I have a picture of a yellow onion, but I didn't think I had any scallions when I took the picture.)
- Mayonnaise (If you like fake stuff I guess you could use Miracle Whip.)
- Mustard (Although I only had yellow mustard, I think a nice spicy mustard would be better.)
- Spices (You know I put black pepper, cayenne pepper, and garlic powder in everything.)
Instructions
- Drain, rinse, and mash the chickpeas. I was surprised at how tuna-like mashed chickpeas look and taste.
- Dice the scallions.
- Mix it together.
- Season to taste.
