Much like baby seals, tater tots are universally loved...moreso even! You don't see Eskimos clubbing tater tots do you? So how can something so good on it's own be made even better? Chili and cheese!
Take a bag of your favorite frozen tots and place a nice layer in a standard baking dish. Add your seasonings of choice and place in a preheated oven. Bake until a nice crisp has formed. You don't want to bake all the way through but you need the outside crispy to keep the tots from getting soggy when the chili is added.
Open up a can of your favorite chili and coat your crispy tots. Place back in the oven and let bake for at least another 20 minutes, then add a generous portion of your favorite shredded cheese. I like a mix of cheddar and Monterey jack, but get as fancy as you like with a good melting cheese. Let this bake for another 10 minutes and you will have a hearty meal to enjoy with a few friends.
Tips: if you like burnt crusty cheese, just add it earlier and bake longer. Some cheeses have a wonderful flavor when well cooked, like the cheese that escaped a pupusa and gets crispy on the comal. Also add any additional toppings you may have around the house: bacon, sour cream, chives, bonito flakes...
