as you know, we all need our
5 + A day. and what better (and easier) way to include vegies in your diet? through stir-frying!
disclaimer: this is the first recipe i've ever written- lots of "guesstimation" so feel free to follow your own measurements.
Chicken and Mixed Veg Stir-fry
1-2 tbsp oil
3 cloves garlic, minced
1 thumb-size ginger, minced
1 onion or shallot, minced
200g skinless chicken breast, cut into cubes or strips.
½ cauliflower
1 small broccoli head
1 medium carrots, peeled and sliced
1 medium courgette, sliced
1-2 tbsp oyster sauce
1 tsp cornstarch dissolved in water (optional)
Rub salt and pepper on chicken pieces.
Cut cauliflower and broccoli into florets then blanch them. It's easier to do this instead of stir-frying them straight as they will turn into mush, especially if you're working with an electric hob! As soon as you have all the veg ready, you can start cooking!
Heat a wok on high heat before pouring oil in. When the oil is hot, add garlic, ginger and onion and stir-fry for at least 2 minutes or until fragrant. Add chicken and stir-fry for at least 3-4 minutes. Add carrots and stir-fry for another 2 minutes. Add courgettes next. When carrots and courgettes are cooked but still tender, add cauliflower and broccoli. Add oyster sauce and give it a big stir to coat. Add cornstarch mixture to thicken sauce.
You may want to add more oyster sauce depending on taste, or salt or sugar.

jalapenocheese Yikes, did that make any sense? Anyway try it at home. Stir-frying is one of my favourite methods of cooking because it's fast and healthy, but mise en place (which takes a bit of time, especially if you need to chop vegies to small pieces) is very important.
