Ingredients
Pancake: 1/2 Blueberry Pancake Mix, 2/3 cup water, 1/4 tsp vanilla extract, 1 Tbsp brown sugar, 1 Tbsp sugar, 1/2 tsp nutmeg, 1/2 tsp cinnamon, 1/4 cup almonds, 1 Tbsp butter
Topping: Powdered sugar, syrup
Hashbrowns: 3-4 small potatoes, 1 clove garlic, 1 Tbsp oregano, 2 tsp dill, 2 tsp basil, 1 tsp thyme, 1/4 tsp salt, 1 Tbsp pepper, 1 tsp paprika, 1/2 cup vegetable oil
Egg: 2-3 eggs, 1/4 cup milk, 1 Tbsp lemon juice, 12 sun dried tomato halves, 1 Tbsp artichoke hearts, 1/2 tsp parsley, 1/4 tsp salt, 1/4 tsp pepper, 1 Tbsp butter
Topping: Parmesan cheese, shredded cheddar cheese, shredded mozarella cheese
Cook Time
Sun-dried tomato halves: Soak for 30 minutes
Hashbrowns: Flip at 12 minutes, cooked in 25 minutes
Eggs and pancakes: Flip at 6 minutes 12 minutes
Final Bake: 5 minutes
Directions
Preheat oven to 300 degrees
Fill small sauce pot with water and set on low/warm; add sun dried tomato halves

Peel, grate and rice

Spread Potatoes into heated pan and add spices. Flip after 12 minutes
Prepare egg and pancake mix
- for eggs: Beat eggs, milk, and lemon juice in medium mixing bowl. Chop and add lettuce and artichoke hearts. Add in and beat parsley, salt and pepper
- for pancakes: Combine pancake mix, brown sugar, sugar, nutmeg, cinnamon and almonds; mix. Add vanilla and water; stir until mixed.
Heat 8" anodized steel or similar frying pan

Heat electric skillet

Note: For best timing, begin cooking eggs and pancakes when the potatoes are flipped.
Pour egg mixture into frying pan, add sun dried tomato halves.
Cook as if an omelet. After ~6 minutes, flip. Do not fold, cook topping into the eggs
Make a single, large pancake (~ 9 inches) using skillet, flip after 6 minutes

The hash browns, pancake and omelet should be finished at about the same time.
Place pancake on a greased baking tin, add topping.
Layer with hash browns
Add omelet. note: All three should be flat and about the same diameter
Add cheeses.
Place in oven until cheese is melted (5 minutes)

One more thing. Given the timing of the sun-dried tomato halves, it may be best to do as much prep as possible starting the hashbrowns. If the process is followed exactly the timing is such that the tomato halves will not have soaked for long enough by the time the eggs are added.
For the first try, the total prep time was one hour and three minutes. I did not start the potatoes until 29 minutes after the tomato halves. If I had started the potatoes about 15 minutes after the tomatoes I believe they would have been ready in time for the eggs.
As for the flavor of the meal, it was good but definitely a little odd. I described it to one of the housemates, Larry, and he suggested it should be called "It all ends up in your stomache anyway." So yeah, the mixing of the sweet flavors in the pancakes and the spicy/hearty flavors of the rest did send my pallet into a bit of a stir but it also made for a new taste experience and an easy to eat meal.
This can be easily sectioned out like a frittata and served to multiple people. It ensures an even distribution of portions as well as saving space on the plate. Give it a try and see if you like it.
