LJ and DW are still refusing to crosspost for me. Eh, whatever. It only takes a few seconds to do it myself. That's better than the aggravation of continuing to try and fix it right now.
Big thanks to those of you who participated in Operation Keep Dawn Awake Until 3 AM last night/this morning. It worked. I crawled into bed at just after 3 but my mind wouldn't shut off and let me sleep no matter how tired I was and how much melatonin I'd taken until about 4 am. All the better. Of course I was still awake and out of bed by 10 but that's later than I've slept in quite some time. I'm going to try and take a nap later and then stay up until 5 am this time. I should be able to manage that. Unfortunately though, naps during the day don't come easily to me anymore. It remains to be seen how late I'll be able to sleep tomorrow. So if anyone is around tonight, drop in and help me again.
I've got some cooking to do today. (So fair warning, the next few paragraphs are about cooking.) I don't know how I'm going to be functioning this week so when I went to the store yesterday I came away prepared to cook for the week. Last night I took the remains of a rotisserie chicken and threw it in the pressure cooker. There was a rich broth and plenty of meat. Add onions, celery, green pepper, mushrooms, garlic and a little fresh thyme, thicken the gravy then serve over brown rice and damn! That was good. I've made it before but I out-did myself this time. Throw in a salad and an apple for dessert and I was disgustingly healthy - well, too much rice, but still!
I bought a small BBQ pork roast that I'm going to throw in the slow cooker on a bed of onions and a little carrot. It'll be fall apart tender and good on rice or rolled in a low carb tortilla. I also bought a big batch of fresh green beans to steam lightly and toss in a little butter. I had some last week and they were fantastic! Tender and flavorful instead of having the consistency of steamed shoe laces like some winter green beans have. It's a big enough batch to last me several meals.
Finally I bought some hot Italian sausage with which to make a batch of spaghetti sauce using the remains of the onion, green pepper and mushrooms. Dreamfields low carb pasta (available now at Walmart) is wonderful stuff. Other than being kind of expensive and the fact that I can't cook it ahead of time and toss it with the sauce which I really loved, I can't tell the difference between it and regular pasta.
I'm also going to make these nutty, crunchy chocolatey bars that I like. Pretty low carb because they're mainly nuts (roasted and chopped almonds, walnuts and pecans) with no sugar added coconut and sesame seeds, bound together with a mixture of nut butter (peanut butter this time) and coconut oil which is solid at room temperature. Pat it thin in a pan, freeze then cover the top with a mostly sugar-free chocolate ganache, cut into generous 4x5 bars, re-freeze and enjoy for under 10 carbs apiece!
I'm also going to try to make these
Almond-Arrowroot Crackers. I've made crackers before and they turned out to be quite satisfying and these look pretty darn good.
Now, it's 51 degrees and sunny outside! Unfortunately it's also windier than all get-out (where the hell does that saying come from?), so I think I'm going to lounge in the pool of sunlight on the couch like a lazy cat and read fanfic for awhile. And later I think I'll do a fannish post. It's been brought to my attention that I rarely speak of fannish things anymore. I'll have to rectify that.
