So after the short 3 day week last week, I have 3 days off. I chose to work on New Year's Day and have Mon off. Yesterday I mostly slept. I actually woke up fairly early this morning but lay in bed watching TV until nearly 9. Then I got up and fed myself a decadent breakfast of biscuits and sausage gravy (actually not bad in carbs though).
I'm using this weekend to rethink my eating habits, trying to get back to something sensible eating again. Six months ago at my doctors appointment I found that my A1C (overall blood sugar) had risen a couple of points. It was within an acceptable range but still, higher than the time before). On Tues when I go to the doctor again I'm sure I won't find any better results but I'm hoping not worse. Anyway, time to restructure my eating habits again. I've gone back to what I did when I first realized I was diabetic - writing down everything with not only the carbs but the fat content. I'm not so worried about the calories because if the other 2 are alright, I'm good.
I poached some boneless, skinless chicken breasts earlier in a fragrant broth with herbs and spices and I'm going to try my hand at a chicken pot pie later. I'll make a thin, rolled biscuit crust with my low card CarbQuick mix. Maybe later I'll try for a pastry crust with the Carbalose flour. I've had good results making pizza crust with it.

Crunchy Low Carb Snack Bars which I've made before. Being made almost entirely of nuts the fat content is pretty high but they're so incredibly rich you only eat a small portion at a time. They're one of my unqualified successes in sweet low carb snacks.
I'm going to make another batch of roasted garlic hummus for workday snacks, too. Great with low carb tortillas in place of pita or flatbread or veggies. Soon I'm going to try my hand at sugar-free ketchup. I was never a huge ketchup fan but I've pretty much cut it out entirely because it's so hihg-carb and the sugar-free kind it so hideously expensive ($3 for a small bottle). But there are plenty of recipes out there for sugar-free varieties for me to try. Time to make some more mustard, too. I like the Garlic/Black Pepper and the Oriental Sesame Garlic flavors best - great on sandwiches and in vinaigrettes.
Tomorrow I think I'll make this
Rosemary White Bean Soup to take for some of my lunches. To make it a little heartier I'll save some of the beans from being pureed and I bought a smoked turkey leg to simmer with the beans and then I'll garnish the soup with shreds of the turkey.
I got the last of the books on the Maya that I ordered last Thurs. It was the first one I ordered and the last to be received by nearly 10 days. I'm not impressed with the speed of their delivery. And then there's the fact that they mailed a big, heavy hardcover in what amounts to a plastic bag with no other padding. It got dropped at least once and one lower back corner was skinned when the bag tore open and crunched in. I shot off an email to say how displeased I was with their mailing procedures. They don't charge for S&H (the book only cost me $5.08) and I asked, if used their services again, could I pay to have it mailed more securely. Mine was a rather pissy tone because, while the book is still more than worth what I paid, it's disappointing because it's no longer as stated - 'Great for a used book! Hardly any wear.' I wasn't holding my breath for a reply since the book took so long (more than 20 days) but I had one on Friday evening. Apologies and that instructions had been added to my account information that any further purchases would be shipped in a box. I'm - grudgingly - satisfied.
It's been years since I left the house on New Year's Eve and this year will be no exception. I hope those of you venturing forth have a safe and sane time with your fun.
