Man, why did it take me almost 8 months after being diagnosed with diabetes to remember that there is a snack food - salty, crunchy, loaded with fat and with very little nutritional value - that I can eat without seriously borking my blood sugar? In fact, it doesn't effect my blood sugar at all because it's totally carb free. And it's still not at all healthy for me!

Pork skins! Regular and Hot 'n Spicy! Yum! Pork fat rules!

And lest you think me a total redneck while I sit here scarfing pork skins and swilling ice tea from an insulated cup the size of a thermos, let me add that it's Earl Grey tea. Earl Grey! Let it not be said that I'm not a classy dame!
