Gyros anyone.  Gyros are basically a Greek Sandwich served on Pita Bread.  Here is what they call poor man's Gyros meat because you can bake it in your oven.


Gyros Meat

Ingredients
  • 1 medium onion, finely chopped or shredded
  • 2 pounds ground lamb
  • 1 tablespoon finely minced garlic
  • 1 tablespoon dried marjoram
  • 1 tablespoon dried ground rosemary
  • 2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Tzatziki Sauce, recipe follows
Directions

Process the onion in a food processor for 10 to 15 seconds and turn out into the center of a tea towel. Gather up the ends of the towel and squeeze until almost all of the juice is removed. Discard juice.

Return the onion to the food processor and add the lamb, garlic, marjoram, rosemary, salt, and pepper and process until it is a fine paste, approximately 1 minute. Stop the processor as needed to scrape down sides of bowl.

To cook in the oven as a meatloaf, proceed as follows:

Preheat the oven to 325 degrees F.

Place the mixture into a loaf pan, making sure to press into the sides of the pan. Place the loaf pan into a water bath and bake for 60 to 75 minutes or until the mixture reaches 165 to 170 degrees F. Remove from the oven and drain off any fat. Place the loaf pan on a cooling rack and place a brick wrapped in aluminum foil directly on the surface of the meat and allow to sit for 15 to 20 minutes, until the internal temperature reaches 175 degrees F. Slice and serve on pita bread with tzsiki sauce, chopped onion, tomatoes and feta cheese.

Tzsiki Sauce is the cucumber salad (basically) served on gyros

Tzsiki

Cool and creamy, this tangy cucumber dip flavored with garlic is the perfect compliment to grilled meats and vegetables. It's served on the side with warm pita bread triangles for dipping, and is also used as a condiment for souvlaki.

Total Time: 20 minutes
Ingredients:
  • 3 tbsp. olive oil
  • 1 tbsp. vinegar
  • 2 cloves garlic, minced finely
  • 1/2 tsp. salt
  • 1/4 tsp. white pepper
  • 1 cup greek yogurt, strained
  • 1 cup sour cream
  • 2 cucumbers, peeled, seeded and diced
  • 1 tsp. chopped fresh dill
Preparation:

Combine olive oil, vinegar, garlic, salt, and pepper in a bowl. Mix until well combined. Using a whisk, blend the yogurt with the sour cream. Add the olive oil mixture to the yogurt mixture and mix well. Finally, add the cucumber and chopped fresh dill. Chill for at least two hours before serving.

Garnish with a sprig of fresh dill just before

And of course you can't forget the Hummus

HUMMUS

1 (12 oz.) can garbanzo beans
1 bulb roasted garlic
2 tbsp. extra virgin olive oil
2-3 tbsp. tahini sauce (sesame paste)
juice of 1 small lemon
1/2 tsp. salt

¼ roasted red peppers

Drain 1/3 of the water from the can of garbanzo beans into a small bowl. Set aside for later use.

In a blender, mix together the garbanzo beans with the remaining can water and the rest of the ingredients.

Blend for 1-2 minutes until a smooth, slightly fluid paste is formed.

If desired, add small amount of the saved can water and blend to create a more fluid consistency.
