You shouldn't have to be the one who has to deal with her. I'm fairly certain you and your roommates have been more than overly kind to her when she obviously doesn't deserve it. People who didn't consider her a friend before letting her into their home will not be as generous as you and your roommates were to her.
I think you should talk to your other roommates about having her removed from the house. I am willing to bet that she won't pay you guys back the money she owes even though she has a job and that she might still come up short on her financial shit. Not to mention she's costing you money with the air conditioner that she constantly runs when it doesn't need to be running because I seriously doubt she wants to pay a little extra in electricity every month (Probably about 20-30 bucks, or less if it's energy star approved).
The white yolk thing wouldn't bother me too much because if she's on a diet of some sort it's understandable. I prefer the whites, myself, but I am usually too lazy to separate them and then cook them. But it would bother me if she was eating MY eggs that I bought with MY OWN money. But what I was trying to get at is she's costing you money in bills and in food. I'd just get her evicted.
You've tried everything, it sounds. You can't talk to her in any way without her either lying to you or blowing it out of proportion. Don't be "pretty close" to kicking her out. It isn't going to change. Save yourself some time and money and do it now.

A) She had paid for them. B) She had saved the yoke for someone else to eat instead of throwing them in the trash to leak everywhere.
