Dinner, You Ate It, There is None Left!

I had the freshly freelanced and ultra chilled silverjet_allie over for dinner last night and I got to expand my arsenal of vegetarian cooking. I had planned on an aubergine bake, using tomato and fresh basil amongst other things so you can imagine my horror when I got to the supermarket to find they had no aubergine. Quite how a modern supermarket runs out of produce is beyond me. I thought we were supposed to be wanton wasteful critters who threw food away etc? Anyway, they did manage to scrape up one traumatised smallish organic aubergine and a packet of baby aubergines for me. Ironically, the baby ones were really tasty and if I was too cook it again, I'd probably choose those over a grown up one.

The salad I made was a total winner, it consisted of blanched whole green beans, a bag of salad leaves (rocket, spinach, chervil and pea shoots) some red onion rings and sun blushed tomato. I was too lazy to make a dressing and just squeezed a whole lemon over it and it was lovely (if I may say so myself). The aubergine bake was a bit average in that I think the aubergines could have been cooked a tiny bit longer.

Dessert? Fresh fruit salad with 0% Greek yoghurt, honey and crushed walnuts thank you very much for asking :)
