Nuts About Salad

Ingred:

*Six large spinach leaves, washed, shredded
*Handful of cashew nuts, chopped
*Ripe pear, diced
*1/2 cup of orange juice
*Two tablespoons of Soy sauce
*Dash of rice wine vinegar
*2 cups of soft chickpeas
*1 teaspoon of shredded ginger
*1 teaspoon of minced garlic
*salt and pepper to taste

Meth:

Simmer juice, vinegar, soy sauce, garlic and ginger for five mins. Add pear, nuts and chickpeas, salt and pepper and simmer until soft. Add spinach and when wilted, serve in small bowls with a nice strong cup of tea. Serves 2 for lunch and = around 350 cals per person.
