Ivor's Cake
Background for non-SCAdians: One person in our camping food group is allergic to eggs. His birthday is early in Sept. It has been his father's tradition to bake him a birthday cake at the camping event on the long weekend. Last year, Dad duitifully brought the box cake, added the two eggs, baked it into a hot mess on the fire, the whole nine yards. And poor Ivor couldn't eat it, too many eggs*. I felt for the kid, yannow?
I was tooling around Pinterest shortly after the Baron's Howe last year and found a depression era cake recipe, aka "crazy cake". I pinned it an vowed I'd make it this year. I did - it was fantastic!
Now, I've made vegan cake before, but it was vanilla and smelled a little like buttered popcorn, which is why I wanted to try this one, being chocolate. Turns out, it's the exact same recipe, only with cocoa added. That's it, no extra sugar, nothing.
