I thought since
okp posted sweet and sour chicken the easy way, I'd share my hard way recipe which is really not hard at all. I'm such a last minute cook I can't be trusted to have something like a jar of sweet and sour sauce (although you can bet I'll be buying a jar to try that next time I'm at the store!) or cream of mushroom soup on hand, so I usually just keep around the basics so I can make from scratch whatever strikes me as tasty.
1 can pineapple chunks
1/3 cup red wine vinegar
2 tbsp. soy sauce
1 tsp. chicken bouillon (you could leave this out to make it vegetarian)
1/2 cup sugar
2 tsp corn starch
Drain the pineapple, reserving juice, and set aside. To juice add enough water to make 1 1/2 cups. Add to a large skillet with vinegar, soy sauce, bouillon, and sugar, stir until sugar is dissolved. Remove some of the mixture to a small bowl and make a slurry with the corn starch. Add to pan stirring constantly, simmer until thick and glossy.
I like things spicy so I usually add a teaspoon or so of Tabasco and crushed red pepper flakes to taste. To make a meal with it:
1 lb. meatballs (I just mix an egg, bread crumbs, salt, pepper, garlic powder and a pound of ground beef, shape into egg rolls and saute in butter till cooked through. You could use frozen Italian style meatballs if you're in a hurry, just cook them first)
Pineapple reserved from making sauce
Sliced bell pepper (sweet red is great!), onion, or other veggie of your choice.
Cooked rice
Throw everything but rice in a pan and cook it till the vegetables are soft. Add sauce, simmer for a minute and then serve over rice.
