We have a new summer intern that started this week. He seems nice: maybe early-mid twenties (when did I think that was young?) and he kind of keeps to himself. I don't know if it's because he's doing the "I'm new and still trying to work out office dynamics" or if that's just how he is, but I keep wondering if I did something to offend him on his first day working or if I smell funny or something, because it's almost like he goes out of his way to avoid me.
Hence the baked goods. I haven't made anything for the office in a while, and I thought blueberry lemon muffins from scratch would be a nice thing for a Friday. I made them tonight, and I almost goofed up the measurements because I was reading several lines down from where I really was in the list. This is my first attempt at scratch, not from a box muffins, and I have to say, they came out really well. The recipe is sort of a basic one, so you can substitute pretty much anything you want for the blueberries and lemon zest. Definietely keeping it on file for another time.
And then I got a request from another co-worker to make something lemony, so I mixed up a lemon Bundt cake after the muffins were out of the oven. That one was mostly Betty Crocker's handiwork, but for some reason the batter came out really loose, so I mixed in a package of french vanilla pudding I happened to have on hand. It thickened it up more, so we'll see how it came out during tomorrow's impromptu office breakfast. I'll mix up a simple milk/powdered sugar glaze to drizzle up on top in the morning.
Going to try to make slow-cooker carnitas for Father's Day. I've got so much going on Saturday that letting the crock pot do its thing for 10 hours while I do what I need to do is definitely going to be a time saver.
