I simply cannot make risotto

Dear Readers,

Okay epic fail this weekend!

I don't know why I cannot make risotto.  Maybe I am just impatient I don't know.  I must have cooked this barley risotto for over an hour, used a ton of chicken stock and it was still undercooked.

Worse yet I overcooked a $60.00 piece of prime rib.

After dinner my husband and daughter went for a walk and I was watching kitchen nightmares and I couldn't help it, I just started crying.  I know that we're all going to have down days, but why the most expensive meal I've made yet?

Our music teacher came over and she immediately commented on good the house smelled.  I had been cooking an asparagus soup which I have to say, while time consuming it was actually very easy to make.  Too bad no one liked it.  It had a lovely texture and I really feel it was the one successful part of the meal this weekend.

Okay so I guess I am being too hard on myself.  The meal over all was very delicious.  I just absolutely hate to see a piece of beef cooked medium.  It was juicy and tasty.  The soup was very good.  I guess I really need to prepare myself to spend forever cooking risotto.  I made a caramelized shallot and red wine gravy that was really very delicious and rich.   On the plus side, I tried marscapone cheese in the risotto instead of cream cheese.  I had to use cream cheese before due to not being able to find marscapone... amazing difference.  Over all, I still maintain that I love the smell of fresh herbs cooking.

My personal observation for this week, is I really need to watch my timing better.

I'm very disappointed in my performance this week.  and I'm very certain he would be too.


My friend asked if I was going to get sick of the same background... Like I only have one kitchen!!! Maybe I'll go mess hers up for a change. hehehe


  All disappointment aside, I really think I plated this well.  How  pretty is that?

*sigh* The challenge continues
