Well, I don't have a set font for each particular scene. I try to go with the font that looks the most like the original japanese font.
For the normal dialogues though, Anime Ace is usually used, at least, that much is standard, or at least for our group.
To kinda make it easier, I ask our editors to create a standard font page, that will be used throughout 1 project (because I'm lazy, I made a standard font page for all, and just tinker with it if I need to).
Two things I never want to see, are dialogues typeset vertically, as I reckon, the English alphabet wasn't made like the Japanese kana :T And dialogues in the middle of connecting bubbles, when they were separate originally.
I've downloaded the files from the link that you've given me, now I just need to see whether I can come around to understand how to do it! For the 'hide the parts with huge fonts', the first step was using blur tool, but then how do you make the words blurry without making the background blurry too? It doesn't look like the background was blurry... As for the old fontset, when I clicked on it, my ver. of photoshop asked for font substitutions because the type of fonts that you gave as examples weren't in the database. Is there any way I could save the font type for usage in CS3? Or do I need to install your ver. of photoshop?
Hmm? I rarely-to-never use the blur tool for editing though so I'm not sure what you're talking about :T
Re fonts, what you have to do is install them. Mosey on over to your control panel, click on Fonts, then go to File > Install Font(s). No need to upgrade to CS5 for that

Sometimes, there are some parts that are a pain to edit out. I reckon the best way to handle them is to hide the parts you think are the most difficult to edit out behind a kick-ass large font.
And this is the old fontset we used. We still use 'em, we just have more extra fonts~
