I got this recipe from Jillian Michael's Making the Cut. So yummy. This is my lacto-ovo vegetarian version.
~cooking spray(canola)
~1/2 lb loose sausage (I just use boca's links and mince them)
~ 4 slices of Lightlife's Smart Bacon
~4 Eggland's Best Large eggs
~1/4 cup of low fat cheddar cheese
1. Preheat over to 350. Spray four muffin cups with spray. Line bottom of muffin cups with sausage and pat down.
2. Wrap bacon around inside the "wall" of each cup. Crack an egg into each one. Bake about 20 minutes, until you see the bacon is done.
3. Sprinkle with cheese and bake until cheese is melted. Serve warm.
Makes 4. Suppose to serve four. My suggestion - eat one with a side of fruit.
