I don't know if I can answer these entirely correctly, but I'll see what I can do.
1. Hope has regressed for two reasons: one I think was because they were having design issues and said, "Eff it, we'll just say he was shrunk cause the god said so" two is my point of view in which, Bhunivelze shrunk him simply for the fact that he was chosen to help Lightning, but because Lightning never officially saw him as his older self, in order to keep things going smoothly, reverted him to what she would remember and be used to. Also, I think he's technically 1014 as he was 14 when they changed the calendar to AF and it has been 1000 yrs later. Part 2: The -san is an honorific in Japan, I think he still calls her Light-san because he respects her and the -san is simply the respective term.
2. Considering he's been chosen by the god himself to help Light, he's probably already up for being saved. That might even explain why his emotions are gone, they've gone ahead to the new world while his body is kinda left behind. *shrug*
3. CHAOS! Apparently the chaos has gotten to everybody EXCEPT Hope. He's probably hiding because A: he believes in Lightning and nobody else cares to want her back as she's prophesied to destroy the world and thus would love to get rid of him too. B: It's where he lives and he doesn't want company XD I mean, come on! Snow and Noel have both been seen in the trailers to outright try and kill Light.
4. It is easy to show Light he's grown up, simply manner of speech, action, and knowledge are good enough to show that he is more mature. No he probably doesn't revert if he leaves. Um, maybe hold a conversation and talk about what he's been up to since she's been asleep? "Oh, hey Light! While you were gone I managed to become Director of the Academy at 18! Oh and I helped Noel and Serah too. And look at this ark! Like it? I built it! (I think) Oh and Fang and Vanille? Yeah I did that too."
End notes: I hope I was right with a lot of these, but I guess we'll have to wait till the game comes out to actually find out all the answers. Also, I liked the little story you wrote in between your questions. Very cute and funny!

3: Problem with that is that Hope was at Ground Zero just like Noel and was still reeling from Serah's death. Light is going to find the place when she finds a teleporter with a sign reading: My Clubhouse no one allowed.

3. I don't think it was an instant thing were everyone was just all of a sudden changed by chaos, so much as it was more of a gradual descent into chaos. Kinda like chaos is everywhere, but you actually have to succumb to it or give up hope to become ridden with chaos. It affected Noel easily because he's seen the end of the world already, and then his new best friend just dies and it's one more person he couldn't protect, thus he gave up. Snow was saddened because his fiance died, and I'm not going to look anymore into why he became so affected because I don't care about Snow (GO DIE SNOW). The chaos doesn't seem to have affected Sazh too much because he might still have a bit of hope that somehow his son can be saved, so he's not completely bonkers like the other two. Also, I don't think Hope really knew Sarah all that well, I mean, it was mention that after Light disappeared he poured himself into his studies, so he probably saw Serah very rarely in the three years before she started time traveling, and even then they didn't spend all that time together either, so saddened? yes, downright heartbroken? no. Not only that, but knowing Hope, he's not gonna sit there and whine and cry about someone dying for 500 frikkin years. He's got better things to do unlike SOME people. *cough* *Snow* *cough* As for his clubhouse, he might actually be keeping tabs on Lightning and is the first one to notice she wakes up and teleports her to his clubhouse and fill her in. (And give her the first outfit, and send her to Luxeria, and maybe spend the night together)
