MMMMMMM.....PIE..........
I just got done baking two Lemon Meringue Pies in shortbread crusts. Yum. We're having a "Team Meeting" tomorrow at work and we were told to bring treats, so I made pie. Of course I made TWO so that I could leave one at home...lol...After the meeting I'm getting my flu shot and then heading home to finish out my day.
The next few weeks are going to be BUSY - thank goodness for holidays and vacation days! Next Tues I have to be at an INS Application Center on University Ave in St Paul at 8AM for fingerprinting...I FINALLY heard from INS and the process is starting with my fingerprints being taken (again? Thought I already did that electronically in '01....oh well) and sent to the FBI so that they can run a check on me. LOL. No worries there. After that I have to rush into the office for a Spanish language class from 9 - 12. Classes will run every Tues from Nov 13 to Dec 4 from 9 - 12. I've long wanted to learn to speak a little Spanish, so I'm excited.
Luckily for me I have Veterans' Day, Thanksgiving Day and the day after Thanksgiving off. I also took a "floating holiday" on Nov 26th, so that will be a nice 5-day weekend for me. Nice, since I haven't taken a vacation since June 2006 and won't take another till Sept. 08.
LOL I'm craning my neck here to see into the kitchen to make sure that "Pumpkin" doesn't get her face into my pies. LOL.
Well time to go "chill" a little. Keep WARM - it's cold and blustery out there and I swear I felt a couple of snowflakes on the way home!!!!
