sperose in statements was talking about roasting some chickens and I offered her some recipes, so I figured I'd share these with you too, since they got posted up publically on the internet already. So, without further ado, 2 chickens by Evan.
Drunken Orange Chicken!
1 whole chicken
1 large can mandarin oranges in light syrup
1 tbsp minced garlic (or more if you're a garlic freak like me)
1 tbsp cayenne pepper
1 tbsp salt
1 half pint whiskey.
place the chicken in a sealable plastic bag, pour the can of oranges INTO the chicken, syrup and all, and the garlic inside too, pour in the whiskey and seal the bag, shake and let it marinate for 1 hour breast side down.
place entire contents into a covered pyrex or other oven friendly container (even if you just gonna put foil over it) rub or sprinkle the salt and cayenne over the chicken and bake for 3 hours at 350 or until chicken is fully cooked. spoon the sauce that has formed while cooking over the chicken when served.
Serve with rosemary red potatoes for a fine compliment.

Herb and Garlic chicken
1 whole chicken
3 tbs minced garlic
1 sweet onion
1 bunch fresh parsley
1/2 stick of butter
2-3 oz white wine (cooking wine, chardonnay, or Riesling)
1 tbsp Thyme
1 tbsp rosemary
1/2 tbsp salt
Black Pepper to taste
Paprika garnish.
Chop the onion and parsley and add 1 tbsp garlic, mix it all up and stuff it in the chicken, place the chicken in an oven friendly covered container (just like before). Melt the butter down with the white wine and 1/2 tbsp garlic and baste the chicken with it, then pour the excess in with the onion/parsley. apply the thyme, rosemary, salt, pepper and the remainder of the garlic to the outside of the chicken and cook at 350 for 3 hours, covered, or until chicken is fully cooked. sprinkle with paprika after slicing for a kick to the flavor. you may want to check it at about 1.5-2 hours and spoon some of the drippings back over the bird to prevent drying.
