Tonight is the great confit d'oignons experiment. In theory, I'm making onion jelly (I swear, it's so much better than it sounds) as holiday presents for people at work. In practice, I have learned that eight large onions take up exactly as much space as there is in my big Le Creuset pot. "Exactly as much" doesn't leave me a lot of room for stirring. Here's hoping they cook down.
More as the evening and its experiment continues, because I know you're all on the edge of your seats.
ETA 1: It's also possible that I should learn how to spell "oignon."
ETA 2: Onions have reached melty, see-through stage. Now take only 3/4 of pot and have given a good amount of water. Cover removed; cooking down continues. Sugar and cider soon.
ETA 3: Have used breaks between stirring melty onions to type up outline for SPN Epic Fic of My Epical Doom. Here's the problem: I keep changing my mind about when things happen, so my outline is way too fluid to actually be a helpful outline. And I still haven't figured out whether it switches POV. *sigh*
Also, I just splashed boiling hot onion juice above and below my left eye. Owie.
ETA 4: Oh my sweet hell, these onions are good! Soon, soon they will be done.
ETA 5: DONE! And may I just say that a) it's delicious, and b) I'm totally going to have to go to the store and buy 8-12 more onions and do this all over again tomorrow and Thursday nights because I have a ton of people on my "treats" list, and this batch, which took me nearly three hours and eight onions, gave me a mere 8 4-oz jars of onion jelly. Oh. Which means I need to buy more jelly jars, too. And more cider. But DAMN, this is good stuff. Totally worth the onion stench that is me and my house right now.
