Risotto: success!

No pictures, because it's not the most photogenic meal I've ever eaten.

Here's what I ended up doing: I cooked the beans in a separate pot, drained them and added them after the risotto was finished. (I also decided to use great northerns, not garbanzos.) Then I microwaved the spinach and squeezed the hell out of it, and threw it in.

Here's what I wish I had done: I wish I had used one sweet onion and one regular onion. I also wish I had put some wine in it, but the only wine I had on hand was one I hadn't had before, so I wasn't sure if I wanted to cook with it or not. (It's a good bet that I'd like it, since I haven't met a white I haven't liked, but I don't know if it would fit the dish. It's an oaked Chardonnay, and I think a crisper wine would be called for in here.) That and if I uncorked it, I'd probably finish the bottle, and I'm home alone right now ;-)

Also, the feta really made the dish. It was pretty mildly flavored, despite my generous hand with the thyme and rosemary, but the feta added that touch of Something.

I think I'm going to go back for seconds now.
