My childhood... rears its head again in a good way.

A friend described these as Hugo's cheesy pillows, which to be honest amused me, as I remember having these when I was four and they have always been Gougére to me. I guess I am sharing them, but this is really for me so I don't loose the very simple recipe. I think I would describe them as savoury profiteroles.

Hugo’s Gougére Recipe

Quarter Pint of water
2oz Butter
2oz Grated Cheese
3oz Plain Flour (sifted)
2 Beaten Eggs
Salt+Pepper
*can add pinch of curry powder to bring out flavour of cheese.
  1. Boil water and butter.
  2. Away from heat shoot in flour all at once and beat until smooth.
  3. When smooth and cool, beat in two eggs a little bit at a time, then mix in cheese.
  4. At this point you can store the mixture till needed in fridge (up to 2 days).
  5. Pipe or spoon mixture into small balls onto greased baking tin, put into oven for 15-20 minuets at 230-240/gas mark 8/9.
