A friend described these as Hugo's cheesy pillows, which to be honest amused me, as I remember having these when I was four and they have always been Gougére to me. I guess I am sharing them, but this is really for me so I don't loose the very simple recipe. I think I would describe them as savoury profiteroles.
Hugo’s Gougére Recipe
Quarter Pint of water
2oz Butter
2oz Grated Cheese
3oz Plain Flour (sifted)
2 Beaten Eggs
Salt+Pepper
*can add pinch of curry powder to bring out flavour of cheese.
- Boil water and butter.
- Away from heat shoot in flour all at once and beat until smooth.
- When smooth and cool, beat in two eggs a little bit at a time, then mix in cheese.
- At this point you can store the mixture till needed in fridge (up to 2 days).
- Pipe or spoon mixture into small balls onto greased baking tin, put into oven for 15-20 minuets at 230-240/gas mark 8/9.
