modified fluffy hotcake recipe. ohohoho. kinda sinful, super 麻烦 but oh so good with lashings of butter and honey.
ingredients
1 cup flour
1tsp baking powder
60gram butter
200ml milk
3 eggs
2tsp sugar
1tsp vanilla essence
1) add sugar to 3 egg whites, beat slightly past the soft folds but before you hit stiff peak stage
2) melt butter, pour in milk, add vanilla essence and the yolks of the 3 eggs. whisk relatively vigorously
3) sieve flour and baking powder into the wet mixture and mix well
4) add egg whites in stages without overmixing
5) fry over small-medium flame til bubbles appear, then flip and fry for another minute. if done right, you can see the pancake rise pretty high once its flipped. option: pour mix into a greased ring and cover pan (best to use a clear cover so you can check for bubbles/doneness) and you should be able to achieve souffle hotcake heights a la hoshino
taste is more rich (cuz more eggs and butter) and also cake-like nom nom nom
