Chocolate banana soft serve:
2 frozen bananas
2 heaping T raw cacao powder
2 T agave nectar
1/4 C almond milk (homemade--but I don't have a recipe in hand)
All ingredients in food processor. Pulse to break up frozen fruit. Process on low until soft serve forms.
Carrot avocado soup (all soups in the raw food diet are cold--but extra turns in the vita-mix will heat them, though if they end up cooking they aren't raw anymore, to state the obvious):
1 C carrot or mixed carrot and vegetable juice (I'm guessing this means juice your own vegetables)
Whole or half avocado
Ground cumin to taste
Lemon juice to taste
Dash liquid aminos (or nama shyou)
Optional garlic or shallot chopped
Sprouts as garnish
Chopped veggies as garnish
In blender combine carrot juice and avocado. Blend to desired consistency. Add cumin, lemon juice and garlic or shallot.
Tomato basil soup:
2 C tomatoes
2 sweet red bell peppers
Juice from one lime
1/2 C soaked almonds
1 C fresh basil
1 T nama shoyu or wheat free tamari
2 T agave nectar
salt to taste
Blend all ingredients in blender.
Corn chowder (contains a great deal of roughage!):
4 C fresh corn kernels (about 4 large ears)
2 C almond milk
1 avocado cut in chunks
1 t finely minced onion
1/2 t sea salt
Corn kernels and sunflower sprouts as garnish
Blend all ingredients in a blender.
Mushroom soup:
1/2 C water
1/4 C almond butter (raw--homemade probably)
1-1/2 C quarterd mushrooms
1 T liquid aminos
Pinch sea salt
4 T finely chopped mushrooms
Crimini or shitake mushrooms are recommended. In blender combine water and almond butter. Add quarterd mushrooms, liquid aminos and salt, blend until smooth. Chopped mushrooms as garnish.
Okay, that night was soup demonstration night, obviously. I think I liked the carrot soup best. The others were mighty strong, but of course raw food will taste much different than cooked food.
