Monday morning, 8/22/16

Yesterday was chicken day. The neighbor brought over a bag of what she called chicken breasts, and it WAS breasts, but not like I assumed. It was more like half the chicken, with just the legs and wings removed. The breasts and back were all still connected, like one big chicken loop. And there were seven of them. I had room in the freezer for two raw loops. I put the other five in two roasters (I have big roasters-- both of them barely fit into the oven-- I had to get creative with that.). And then I figured, huh, there's also room for this bag of yellow potatoes, so I threw those in as well, covered the roasters, then put them in the oven for three hours at 300º.

After they'd baked and cooled, I began processing. I pulled all the meat, and threw the bones away. While I was doing that, I laid out the skins on a cookie sheet, on some parchment paper. I baked the skins until they were crispy, and made some doggy treats for Penny. With the pulled breast meat, I weighed out one-pound freezer bags, and wound up with seven 1# bags of pulled breast meat. I put the meat in the fridge, and I'll find room for them in the freezer today. I put the baked chickeny potatoes in a zip-lock bag in the fridge. We'll probably eat those over the next couple of days (more likely me, but maybe we).

There was also a nice amount of stock, which went into the fridge. I'll be able to take the hardened fat off of it today, then I'll likely use the stock for something today, rather than try to find room for it in the freezer. I feel like I'm pretty skilled at "processing" different foods.
